I enclose a cheque for the wine waiter you supplied at short notice…etc.
Thank you so much for stepping into the breach, this was very much appreciated.
Could I also take this opportunity to congratulate you on the quality of your catering for my daughter’s wedding.
Eight or nine people came up to me after the event specifically to praise the quality of the meal.
Having spent many years on the conference circuit and having attended many, many functions of various
sorts, I have to say that the meal you provided was possibly the best I have ever had provided at such a function.
The sheer quality of the beef (and its generous portion size) was mentioned by many people.
It was a lovely cut of beef, well flavoured, nicely cooked and beautifully tender, much more so than I had been expecting.
The other courses were also superb and we had absolutely no complaints from any guests, only praise.
The meal definitely enhanced the entire event, and contributed to a memorable day.
Thank you very much for your efforts.

Wow, where do we begin!
Well we both felt the need to write to you and try to explain how grateful we are for what you both have done for us.
The 31st June 2007 will definitely go down as the best day of our lives and quite simply we have you to thank for that.
We asked you to be our caterers on the strength of numerous recommendations, each full of praise.
At that time little did we know you were to become, not only our caterers but our event organisers, our project managers and eventually our guardian angels.
The vigour, enthusiasm and commitment with which you organised our day was amazing.
The weather had threatened to put a damper on it but thanks to you on this occasion “ rain did not stop play”.
The food was absolutely first class Hilary, it truly was.
We both feel tremendously fortunate to have had your involvement on our special day.
What a pair of professionals you are.
We both look would like to express our heartfelt gratitude for all you have done for us.

I have taken the liberty of adding a few comments to this letter that were passed on to me about food, please feel free to add them to your website, and I will certainly recommend you in the future.
“ The quiches were to die for, the roast potatoes were wonderful, and the vol au vents were being “stolen” from plates if you did not eat them quickly enough!”
As I mentioned, I did not get to sample the buffet till around 2 in the morning, when I found a tray of sandwiches that had not been put out. Even at that time they were still wonderfully fresh and tasty and went down a treat.

Dear Hilary,
You did a wonderful job to cater for 100 people out of what amounted to a field kitchen - totally professional and a credit to you.
The staff were pleasant and polite and the two more senior waiters were a great god-send (even helping us out a little bar wise - above and beyond what they were actually there for).
George was an excellent Maitre d' - keeping his eyes open and a finger on the pulse.
Then later the evening buffet - what a marvel - our guests were delighted with their food - another 100 catered for and all so smoothly.
Your contribution to our day was magnificent and we would recommend your services to anyone.
I have wondered a few times if anyone gave a thought to the superb food being created behind those black curtains!!
We wish you well in your new venture - I have not said 'luck' as luck plays no part in your wonderful organisational skills - well done
